Sepia officinalis measures up to 45 cm in mantle length, ranging from 30 cm in subtropic areas to 49 cm in temperate areas. Weights are between 2 kg (subtropic areas) and 4 kg (temperate areas). The largest recorded individual reached a mantle length of 60 cm. European cuttlefish have large eyes and a mouth with beak like jaws located at the base of the mantle. The mantle houses reproductive and digestive organs, as well an internal shell called the cuttlebone. The cuttlebone shape is oblong with a rounded posterior end and an anterior end that tapers to a point.
The body of S. officianalis is broad and dorso-ventrally flattened, having an oval shaped cross section. A pair of flat, wide fins runs the length of the mantle. Fertilized eggs are stored in the oviduct of the female Sepia officinalis until they are ready to be deposited. Eggs are produced with deposits of ink, to color and, therefore, camouflage the eggs for protection. A young Sepia officinalis hatches with a yolk to provide nutritious support until they are able to catch their own prey.

Sépie tráví den zahrabaná v písku na dně, navečer začne být aktivní a vydává se na lov. Číhá vleže v písku, pak z něj vyklouzne a k vybrané kořisti (obvykle se živí menšími rybami nebo mlži) pomalu pluje pomocí vlnovitého pohybu ploutevního lemu. Když je dostatečně blízko, vymrští obě lapací ramena, do té doby uložená v kožních kapsách a oběť jimi uchopí. Oběť usmrtí pomocí ostrých čelistí a ochromujících sekretů.
Doba rozmnožování je na jaře. Samec předvádí zajímavý pářící tanec, při kterém rychle střídá svoje tělesné zbarvení. Samotné páření proběhne tak, že samec vloží do plášťové dutiny samice spermatofor jedním ze svých lapacích ramen. Samice upevňuje vajíčka tmavé barvy a tvaru citronu na mořské rostliny. Sépie obecná má přímý vývin, stejně jako všichni hlavonožci. Mláďata tráví po vylíhnutí nejprve nějakou dobu v planktonu, pak začnou sama aktivně plavat.

Sie besitzen einen „Rückenknochen“, genannt Schulp (auch Sepienbein[1]), der als Schwimmkörper dient.
Beim Gewöhnlichen Tintenfisch gibt es zwei Arten des Beutefangs. Zum einen den sogenannten Tentakelschuss und zum anderen den Beutesprung. Welcher davon eingesetzt wird, ist abhängig von Art und Größe der Beute. Der Tentakelschuss wird nur bei kleineren Krebsen, Krabben, Garnelen und Fischen eingesetzt. Hierbei stellt sich der gewöhnliche Tintenfisch zuerst in eine Position, von der er die Beute gut sehen kann, danach spreizt er die kurzen Tentakel zur Seite ab und die zwei langen Tentakel kommen zum Vorschein. Er verweilt kurz, und „schießt“ dann mit den zwei langen Tentakeln auf die Beute, um sie sicher festzuhalten. Danach schlingt der Gewöhnliche Tintenfisch seine restlichen Tentakel um die Beute oder verschlingt diese sofort. Der Beutesprung wird bei größeren Krabben eingesetzt. Bei dieser Art des Beutefangs werden die zwei langen Tentakel nicht eingesetzt. Es wäre zu gefährlich für den Gewöhnlichen Tintenfisch, wenn das andere Tier in der Lage ist, ihn an den langen Tentakeln zu verletzen. Auch hier geht der Gewöhnliche Tintenfisch wieder in eine Position, in der er die Beute gut sehen kann, und „springt“ dann auf die Beute, um sie anschließend mit den acht kleineren Tentakeln zu umklammern. Danach wird die Schale des Beutetiers mit einer Art scharfem Schnabel im Mund der Sepia geöffnet, und ein Nervengift lähmt es dann. Schließlich wird das Innere der Beute durch Enzyme im Speichel des Gewöhnlichen Tintenfisch Sepia verflüssigt und ausgesaugt. Dies kann bis zu einer Stunde dauern.
Der Gewöhnliche Tintenfisch kommt vom sehr flachen Subtidal bis in Tiefen von etwa 200 Meter vor. Junge Tiere, die z. B. beim Schnorcheln gesehen werden können wenn man Sand aufwirbelt, gehen nicht tiefer als 50 bis 80 m, da ihre luftgefüllte Schale höhere Drücke noch nicht aushält. Der Gewöhnliche Tintenfisch kommt von der nördlichen Nordsee (bis etwa zum 63. Breitengrad; südnorwegische Küstenregion) über die Westküsten der Britischen Inseln, im Mittelmeer und an der Westküste von Nordafrika bis etwa zum 15. Breitengrad vor. Die Art fehlt in der südlichen Nordsee (engl. Ostküste, deutsche und niederländische Wattenmeerküste).

The common cuttlefish or European common cuttlefish (Sepia officinalis) is one of the largest and best-known cuttlefish species. They are a migratory species that spend the summer and spring inshore for spawning and then move to depths of 100 to 200m during autumn and winter.[2] They grow to 49 cm in mantle length (ML) and 4 kg in weight.[3] Animals from subtropical seas are smaller and rarely exceed 30 cm in ML.[4]
The common cuttlefish is native to at least the Mediterranean Sea, North Sea, and Baltic Sea, although subspecies have been proposed as far south as South Africa. It lives on sand and mud seabeds and it can tolerate brackish water conditions.
Cuttlefish only have a lifespan of 1–2 years (captive and wild) and have many predators including sharks, dolphins, seals, fish, and cephalopods which includes other cuttlefish.[5] They have many defensive mechanisms to help protect them from predators including a siphon which they can use to shoot water out of to propel them away from danger, ink which can distract and disorient a predator as the cuttlefish escapes, and their camouflage abilities which can help them avoid predators altogether.[6]
A 2008 study on S. officinalis[7] revealed that cuttlefish embryos, if visually exposed to a certain species of prey (e.g. crabs), will hunt primarily for that prey in later life. S. officinalis usually prefer shrimp to crabs, but when the embryos were exposed to crabs and the embryos had hatched, the young cuttlefish switched preferences and proceeded to hunt the crabs more often than the shrimp.[8]
During the day, most cuttlefish can be found buried below the substrate and fairly inactive. At night however, they are actively searching for prey and can ambush them from under the substrate. Cuttlefish are carnivorous and eat a variety of organisms including crustaceans (crabs and shrimp), small fish, molluscs (clams and snails), and sometimes other cuttlefish which is more commonly seen when the abundance of other prey is low.[5]
The common cuttlefish is one of the largest species of cuttlefish with their mantles (does not include their head and arms) reaching upwards of 45 cm. The mantle houses the reproductive and digestive tracts of the cuttlefish and is also home to an internal shell called the cuttlebone.[2] The common cuttlefish has two highly developed eyes, eight arms which are located around the mouth and are used to hold and move prey, two tentacles which are used to quickly capture prey, and a radula which is used to tear and rip apart any prey they have captured.[5] Cuttlefish are well known for their unmatched camouflaging abilities which are possible due to light scattering leucophores, pigmented chromatophore organs, and structurally reflecting iridophores all located in their skin.[9] These specialized characteristics give them the ability to not only change their colour, but also change the texture appearance of their skin and all of this is done despite them being colour-blind. Their camouflaging abilities are categorized into four main types including mottle, stipple, uniform, and disruptive.[10] These complex camouflage abilities are not just present in adult cuttlefish, but cuttlefish juveniles also have these complicated characteristics, which allows them to be able to camouflage from a young age.[11]
Cuttlefish reach sexual maturity between 14 and 18 months of age. During breeding season, which occurs during spring and summer in shallow waters, male cuttlefish will display a black and white zebra pattern on their mantle to attract females and females will display a uniform grey colour to indicate they are ready to mate. Cuttlefish are internal fertilizers and the number of fertilized eggs can range from 100 to 1000. After the eggs are fertilized, they will remain in the oviduct of the female for anywhere between 30 and 90 days before they are laid.[2] The eggs attach to seaweed, shells, or other substrates to prevent them from drifting away and have ink deposits on them to aid in camouflage.[1]
Sepia officinalis is a species that is commonly fished in the Mediterranean, including countries like Greece and Spain. Although it is fished extensively and wild stocks in some regions are close to being over-exploited, population numbers are not declining so the species is of Least Concern on the list of threatened species.[1] Cuttlefish have many uses which makes them a popular catch. Their cuttlebones are commonly sold in the pet bird industry because they provide a good source of calcium, help keep a bird's beak trimmed, improve jaw strength, and provide entertainment for the bird.[12] Sepia officinalis is also growing in popularity as a foodstuff because it has a similar taste to octopus and squid and is a good source of healthy proteins and lipids.[13] Cephalopod ink is believed to have many beneficial health effects including anti-inflammatory and anti-oxidant activity, antimicrobial and potential anticancer properties, and anti-hypertensive and anti-retroviral activity.[14] Other uses for cephalopod ink include writing, drawing, and painting uses along with potential cosmetic uses. Similar to cuttlefish meat, the ink is also commonly used in the food industry for both its flavor and as a food dye.[14]
It is unknown where the type specimen of S. officinalis was collected, as the location is given simply as "Oceano". It is deposited in the Linnean Society of London.[15]

Cuerpo ancho, oval, casi rectangular, aplanado, de 30-40 cm, con aletas que recorren todo el cuerpo. El borde del manto dorsal forma un lóbulo obtuso entre los ojos. Sifón ventral pequeño. Brazos retráctiles, con cuatro filas de ventosas, y los tentáculos unas tres veces más largos, y que se usan para la caza o para la reproducción, con la maza provista de una quilla natatoria y más de tres ventosas ensanchadas en la fila central. El hectocotilo es el cuarto brazo izquierdo, con una modificación de algo más del cincuenta por ciento. Concha totalmente interna (el sepión o jibión) es laminada y con estrías. Sublitoral, hasta los 250 metros, en arena o sedimentos, donde se pueden enterrar parcialmente. Se alimenta de crustáceos y peces. Realiza la puesta sobre corales o conchas, y si tiene tinta disponible la inyecta en los huevos para oscurecerlos y facilitar así su ocultamiento. Durante el cortejo y el apareamiento se refugia en los huecos entre las rocas de fondos arenosos, pudiendo desarrollar a veces comportamiento territorial.
Las Sepia officinalis son capaces de algunas de las respuestas de camuflaje más dinámicas en el reino animal. Pueden cambiar sus patrones corporales rápidamente porque los cromatóforos en su piel están bajo control neuronal directo.
Las Sepia officinalis también usan el contraste y los bordes de los patrones visuales para ayudar a su respuesta de camuflaje, se pueden enmascarar como objetos 3D de alto contraste. Se mostraron patrones de tablero de ajedrez inferiores, para provocar patrones disruptivos en la piel del animal.[1]

Lisäksi seepialla on lihaksikas kieli, jonka se voi joidenkin sammakoiden tavoin syöstä saaliin kimppuun pidemmän matkan päästä. Kielessä on pieniä ”kynsiä”, joilla seepia saa otteen saaliistaan. Seepian muita, pääjalkaisille tyypillisiä piirteitä ovat sininen veri, kolme sydäntä, rengasmaiset aivot joiden läpi kulkee vatsa, ja musteen erittäminen. Seepialla on kameleonttimainen iho. Se pystyy muuntautumaan ympäristöönsä sopivaksi ja näin hämmentämään saalistaan tai vihollistaan.
Seepia tavataan yleensä noin 200 metrin syvyydessä. Nuori yksilö elää noin 50–80 metrin syvyydessä, kunnes sen iho kehittyy kestämään korkeampaa vedenpainetta.
Seepia on yöeläin. Se elää riutta-alueilla, ja sitä on myös onnistuneesti kasvatettu ja saatu lisääntymään akvaario-oloissa.
Seepia elää noin vuodesta puolentoista vuoden ikäiseksi. Vanhemmalla iällä sen saalistustaidot heikkenevät ja se voi kuolla ruoan puutteeseen.
Seepia-nimike tulee musteesta. Ennen seepioista tehtiin tummanruskeaa mustetta, kunnes muut keinot yleistyivät. Seepiat ovat suurta herkkua Välimeren maissa.

La Seiche commune (Sepia officinalis) est une espèce de mollusques céphalopodes.
Longue de 20 à 30 cm (tentacules compris), elle possède un flotteur interne (appelé "l'os de seiche" qui est doué "d'un rostre" c'est une coquille qui est devenu interne au fil de l'évolution et qui n'a rien d'un os) qui joue aussi un rôle d'endosquelette et peut-être de réserve minérale. Sa tête porte des bras courts munis de ventouses, ainsi que deux grands tentacules et deux très gros yeux.
Les jeunes sont appelés seichons. Il n'y a pas de stade larvaire comme chez le poulpe, les seichons sont des modèles réduits de l'adulte au sortir de l'œuf. Ils grandissent et se nourrissent dans l'œuf qui est alors recouvert d'une « peau » transparente. La seiche est dotée comme tous les céphalopodes d'un œil inhabituellement grand et complexe chez les invertébrés, qui lui offre une vision sophistiquée. Elle est de plus dotée d'une ligne latérale, qui comme chez le poisson, lui apporte des informations complémentaires sur son environnement, en tant que prédatrice, mais aussi en tant que proie. Douée de mimétisme, elle peut changer de couleur grâce aux chromatophores de sa peau, qui sont gouvernés par le cerveau. Comme le poulpe, grâce à ses tentacules elle peut saisir et manipuler des objets.
Elle projette un liquide noir, appelé sépia par un organe spécifique : l'entonnoir, qui débouchent dans la cavité palléale. Ce liquide, aussi appelé « encre » ou « noir de seiche » lui permet de se dissimuler pour prendre la fuite.
Son cerveau est − par rapport à celui d'autres invertébrés − très développé. La seiche fait partie des espèces qui comme les mammifères et les oiseaux, ont développé d'importantes capacités d'apprentissage par observation et de mémorisation. Certains parlent même d'intelligence tant elle est capable de trouver des solutions à des problèmes.
D'une longueur du corps de 15 cm (mâle) à 30 cm (femelle) en moyenne, la seiche commune peut atteindre 45 cm environ avec les tentacules (DORIS (11 avril 2016)[1]). Elles ont une silhouette très aplatie et allongée (ce qui les différencie notamment des poulpes), de forme ovale quand les tentacules sont allongés et parallèles. Ces tentacules sont au nombre de 10, dont 2 sont plus longs que les autres, et dissimulés au repos. Le ventre est toujours blanc, mais le dos est marbré de plusieurs couleurs qui imitent le substrat, et qui peuvent changer (ainsi que de texture). Les yeux sont situés sur les flancs, avec une pupille complexe en forme de W. Tout le pourtour du manteau est bordé d'une nageoire continue et ondulante (DORIS (11 avril 2016)[1]).

Ses puissants muscles lui permettent de se déplacer rapidement en utilisant un système de siphon. Ce système est flexible et lui permet de se déplacer aussi bien en avant qu'en arrière (souvent observé lors de l'approche d'un plongeur). Les seiches ont aussi une frange de nageoires qui court autour de leurs corps. En ondulant cette frange, les seiches sont capables de nager, de ramper sur le fond marin et de s'orienter[2].
La seiche est un prédateur qui ne mange que des proies vivantes (dont des juvéniles de ses propres prédateurs, ce qui est très rare chez les invertébrés). Elle chasse et mange des crustacés (crabes et crevettes surtout) et de petits poissons. Un cannibalisme est parfois observé, surtout en aquarium.
C'est une espèce chromatophore, atout qui lui permet de passer souvent inaperçue au vu des prédateurs.
Pour attraper une proie rapide, la seiche s'approche lentement de sa cible, puis ses 2 grandes tentacules sont projetées vers sa cible avec une vélocité qui peut atteindre 2.5 m/s[3]. Cela qui lui permet d'attraper sa proie à distance. Ses 8 autres tentacules lui permettent alors de maintenir la proie en place. Pour une proie plus lente tel qu'un crabe la seiche préfère un "saut" final plutôt que de projeter ses tentacules[3].
La seiche utilise aussi la polarisation de la lumière pour des tâches impliquant la détection d'objets en mouvement, et peut-être pour la communication[4].
Les mâles possèdent un bras transformé, dépourvu de ventouses, contrairement à celui de la femelle. Par ailleurs, il est observé que les mâles ont des rayures aux tentacules les plus latéraux de la partie antérieure du manteau.
Les seiches s'éloignent des côtes durant l'hiver et s'en rapprochent à partir du printemps, pour s'y reproduire. La seiche pond entre 150 et 4 000 œufs[5] entre juin et juillet. Après la reproduction, les adultes meurent.
Durant la phase de reproduction, la seiche a recours à des danses nuptiales durant lesquelles elle change rapidement de couleur (passant par exemple de noir à vert fluo en quelques millisecondes). La femelle, après l'accouplement, gardera les œufs quelques jours puis les pondra sur une surface abritée.
Il n'y a pas de stade larvaire chez les Seiches : dès leur naissance les nouveaux-né sont des copies conformes, miniatures, des adultes.
La maturité sexuelle est acquise à un an environ (légèrement plus précocement chez le mâle). L'accouplement se fait « tête à tête et ventouses entremêlées ». Le mâle dépose des spermatophores au moyen d'un bras dit « hectocotyle » (sans ventouses et contenant un canal, qui par contraction propulse les spermatophores dans les organes génitaux de la femelle). C'est l'un des bras ventraux, modifié chez le mâle.
Comme les pieuvres, les seiches vivent et meurent par cohortes (tous les individus de 2 ans meurent à la même période, avant la naissance de leurs petits), ce qui explique les apparitions épisodiques d'os de seiche sur les plages.
Cette espèce est largement répartie dans tout l'océan Atlantique, de la Baltique à l'Afrique du Sud (DORIS (11 avril 2016)[1]).
On trouve la seiche commune dans différents milieux sur le plateau continental, souvent à profondeur moyenne, principalement sur les fonds sableux (où sa forme aplatie et sa coloration lui permettent de passer inaperçue) et dans les herbiers, souvent près de la surface mais aussi jusqu'à 200 m de profondeur (DORIS (11 avril 2016)[1]). La femelle dépose ses œufs sur les côtes.
Elle migre (s'éloigne du littoral en hiver pour revenir y pondre en été). On ne connaît pas encore comment ses migrations s'effectuent (revient-elle à l'endroit où elle est née pour y mourir après avoir pondu ?).
Des expériences sont conduites depuis les années 1990 aux États-Unis, en Italie, en Israël, en France et au Japon pour notamment étudier ses compétences mémorielles et ses compétences spatiales (stratégie dans un labyrinthe) exceptionnelles. Il a été montré que la mémoire de la seiche se développe précocement dans son ontogenèse[6]. Son cerveau est encore plus gros proportionnellement que celui du poulpe. On a noté qu'il y a un dimorphisme sexuel cognitif, une différence entre mâles et femelles dans le choix des stratégies de réponse pour l'orientation dans un labyrinthe, comme chez l'humain, les primates, le rat ou l'oiseau.
La mémoire de la seiche et sa plasticité sont étudiées y compris in ovo (dans l'œuf).
Son adolescence est longue, ce qui est fréquent chez les espèces dotées de capacités importantes d'apprentissage. Elle dispose d'une mémoire de court terme les premiers jours, et d'une mémoire à long terme qui se développe au cours de ses premiers mois de vie. Elle dispose d'une structure particulière du cerveau (dite lobe vertical ou complexe vertical), associative, qui joue un rôle dans la mémorisation.
Elle a une préférence alimentaire, qu'on peut modifier, par l'"éducation" en laboratoire en fonction des proies disponibles ou accessibles dans son milieu. Le neurone géant découvert chez le calmar, a également été trouvé dans le cerveau de la seiche.
Une étude publiée en 2021 démontre que cette espèce réussit avec succès des tests d'intelligence destinés aux enfants, notamment sur la capacité de patienter plus longtemps pour une meilleure récompense, ou contrôle de soi[7].
Comme la pieuvre la seiche est dotée d'une vue sophistiquée et elle change de couleur pour se fondre dans son environnement ou pour exprimer des « sentiments ». Elle peut aussi en quelques millisecondes modifier la texture de sa peau et imiter la granularité de leur environnement. La peau des céphalopodes est en effet entièrement dotée d’une triple couche de leucophores (réfléchissant uniformément la lumière), d’iridophores (source de couleurs iridescentes par diffraction différentiée de la lumière) puis de chromatophores (qui, sous l'action du cerveau permettent à la peau de changer brusquement de couleur, en arborant des motifs colorés parfois très complexes)[8]. Les chromatophores « contractiles », permettent à la peau de l’animal de générer de petites cornes et d’autres pustules mimétiques imitant des algues, du sable, du gravier, une roche ou une croûte d'organismes marins... La seiche peut aussi « coder » ses motifs cutanés dans des longueurs d’onde que nous ne voyons pas, ce qui lui permet probablement aussi de communiquer entre individus via la couleur de leur peau. La peau de certaines seiches peut même générer des motifs en mouvement imitant les reflets de vagues en mouvement[8].
Ceci fait de cet animal une source d'inspiration pour le biomimétisme et pour la robotique molle, qui pourrait « bientôt » peu à peu intégrer une « cape d'invisibilité » avec une peau se colorant à la manière d’un écran LCD souple et modifiant sa forme, comme le montrent Pikul et al. en octobre 2017 dans la revue Science : ils ont en effet obtenu des textures complexes au relief modifiable sur une « peau » artificielle à base de silicone. En 2017, les possibilités de transformation bi- ou tri-dimensionnelles programmables de surfaces élastiques et colorées sont encore très rudimentaires, mais, par exemple, associées à un réseau de neurones artificiels, elles laissent entrevoir un nouveau champ du possible. Dans ce cas ce sont des membranes élastomères enrobées de mailles textiles inextensibles et peuvent être plus ou moins « gonflées » pour prendre des formes pré-programmées[9],[10].
Les seiches n'offrent pas de soins parentaux à leur progéniture. Les chercheurs se sont demandé si elles naissaient avec un instinct ou si elles apprenaient à la naissance, en matière de préférences alimentaires notamment. Les expérimentations ont montré que les jeunes seiches sont capables d'un apprentissage très précoce, y compris dans l'œuf. Elles ont des préférences alimentaires acquises dans la prime jeunesse, voire dans l'œuf, car la familiarisation à ces proies commence chez l'embryon qui perçoit déjà son environnement au travers de la membrane transparente de l'œuf[11]. On pensait que l'embryon n'avait pas de mémoire à court terme mais il a montré des capacités à retenir certaines informations, au moins une semaine durant. En laboratoire, la seiche peut inhiber son comportement prédateur quand il n'est pas le plus efficace.

Ce mollusque, relativement abondant fait l'objet d'une pêche intensive (de 2 000 à 10 000 tonnes par an en Manche). Il est présenté dans le commerce ou dans les assiettes des restaurateurs sous le nom de seiche bien sûr, mais aussi et abusivement sous le nom d'encornet.
La pêche de la seiche se pratique traditionnellement avec un hameçon spécial, la turlutte dite aussi calamarette. En Bretagne, la seiche est connue sous le nom de morgate ou margatte.
On ne dispose pas d'étude exhaustive évaluant ses populations, mais c'est une des espèces qui peuvent localement être victimes d'une surpêche, ainsi que de la pollution des littoraux et des ports. Le recul des herbiers marins et les perturbateurs endocriniens l'affectent probablement également.
Sepia officinalis
La Seiche commune (Sepia officinalis) est une espèce de mollusques céphalopodes.
Longue de 20 à 30 cm (tentacules compris), elle possède un flotteur interne (appelé "l'os de seiche" qui est doué "d'un rostre" c'est une coquille qui est devenu interne au fil de l'évolution et qui n'a rien d'un os) qui joue aussi un rôle d'endosquelette et peut-être de réserve minérale. Sa tête porte des bras courts munis de ventouses, ainsi que deux grands tentacules et deux très gros yeux.
Les jeunes sont appelés seichons. Il n'y a pas de stade larvaire comme chez le poulpe, les seichons sont des modèles réduits de l'adulte au sortir de l'œuf. Ils grandissent et se nourrissent dans l'œuf qui est alors recouvert d'une « peau » transparente. La seiche est dotée comme tous les céphalopodes d'un œil inhabituellement grand et complexe chez les invertébrés, qui lui offre une vision sophistiquée. Elle est de plus dotée d'une ligne latérale, qui comme chez le poisson, lui apporte des informations complémentaires sur son environnement, en tant que prédatrice, mais aussi en tant que proie. Douée de mimétisme, elle peut changer de couleur grâce aux chromatophores de sa peau, qui sont gouvernés par le cerveau. Comme le poulpe, grâce à ses tentacules elle peut saisir et manipuler des objets.
Elle projette un liquide noir, appelé sépia par un organe spécifique : l'entonnoir, qui débouchent dans la cavité palléale. Ce liquide, aussi appelé « encre » ou « noir de seiche » lui permet de se dissimuler pour prendre la fuite.
Son cerveau est − par rapport à celui d'autres invertébrés − très développé. La seiche fait partie des espèces qui comme les mammifères et les oiseaux, ont développé d'importantes capacités d'apprentissage par observation et de mémorisation. Certains parlent même d'intelligence tant elle est capable de trouver des solutions à des problèmes.

Ten un corpo ancho, oval, aplanado, de ata 30–40 cm de lonxitude. Presenta dúas expansións laterais a modo de aletas que percorren todo o corpo. O bordo anterior do manto presenta na zona dorsal un lóbulo triangular, obtuso, que avanza entre os ollos. O sifón é ventral e pequeno.
A cuncha é interna, de forma ovoide, laminada e con estrías. Cando se encontran varadas nas praias, os nenos (e os mariñeiros) chámana pan de gaivota, debido ao costume destas aves de picar nelas para conseguiren o carbonato cálcico que precisan para fabricaren a casca dos seus ovos.
Teñen oito brazos e dous tentáculos. Os primeiros son curtos, retráctiles e con catro filas de ventosas; os segundos son tres veces máis longos e só presentan algunhas ventosas, ensanchadas, no extremo final ou maza; só se utilizan para a reprodución ou para agarrar as presas.
A cor é moi variable, en función das circunstancias biolóxicas e o substrato no que se pousan. Adoitan ser de cor moura ou gris apardazada, con puntos de distinto tamaño ou bandas de cor. A zona ventral é abrancazada.[7]
Distribúense amplamente no Atlántico e no Mediterráneo.
Viven na franxa sublitoral, ata os 250 metros de profundidade, sobre area ou sedimentos onde se poden enterrar parcialmente.
Aliméntase de crustáceos e peixes. A posta faina sobre algas, corais ou cunchas abandonadas[8] e hai veces que inxecta tinta nos ovos para escurecelos e facilitar a camuflaxe e o ocultamento fronte aos depredadores.
En Galicia é unha especie de grande interese comercial. Péscase con diversas artes e en todas as épocas do ano aínda que a súa mellor época vai de decembro a febreiro.
Cocíñase de diferentes formas (cocida, á prancha, na súa tinta, á romana).
Filgueira recolleu tamén a denominación popular de galiña do mar, que Ríos Panisse explica pola preseza do bico córneo, que pode semellar ó dunha galiña.
Á xiba pequena chámana chopo e choquiño (que non hai que confundiur cos verdadeiros choquiños, especies do xénero Sepiola e outros, da familia dos Sepiolidae).
A cuncha de xiba recibe os nomes populares, entre outros, de pan de gaivota e pan senso.
En Redondela celébrase unha afamada Festa do choco. Di Eladio Rodríguez que os chocos "Abundan ... muy especialmente en Redondela, que vulgarmente se llama en todo su contorno a 'vila dos chocos'".

Il resto del corpo è composto da due grandi occhi e otto piccoli tentacoli che nascondono al centro un becco corneo simile a quello di un pappagallo e due tentacoli più lunghi che presentano le ventose solo all'apice e vengono estroflessi con uno scatto velocissimo per catturare le prede.
Dentro il mantello, dove è presente la conchiglia del mollusco nota come "osso di seppia", l'animale può riempirsi e svuotarsi d'acqua a proprio piacimento in maniera tale da cambiare livello di profondità. Il colore è grigio-giallastro, solitamente zebrato.
Quando è in pericolo la seppia emana una nuvola d'inchiostro nero dall'ano. L'inchiostro è liberato da un'apposita sacca (situata fra le branchie) e disperso con l'ausilio d'un getto d'acqua emesso dal sifone (posto sotto gli occhi e avente anche funzione respiratoria) per confondere il predatore e darsi così alla fuga. Come tutti i cefalopodi più evoluti infine può cambiare colore (e anche consistenza della pelle) sia per fini emotivi, sia per fini predatori e difensivi. La dieta è composta da crostacei come granchi di cui è ghiotta, piccoli pesci e cefalopodi, tra cui anche suoi simili.
Nel Mediterraneo nei mesi primaverili si avvicina alla costa per depositare le uova in anfratti subacquei.
In tale stagione i pescatori pongono in mare delle nasse, nelle quali le femmine entrano per deporre le uova seguite dai maschi e così vengono catturate.
È diffusa nel mar Mediterraneo e nell'oceano Atlantico orientale, dalla penisola scandinava al Marocco.
Vive sui fondali sabbiosi o nelle praterie di Posidonia oceanica, sino ai 100 m di profondità.

De gewone zeekat (Sepia officinalis) is een van de bekendste soorten inktvissen.
Tussen hun 8 gewone tentakels zitten twee langere vangarmen die alleen te zien zijn als de sepia een prooi grijpt. De prooi wordt doorgebeten door middel van een snavelvormige bek die tussen de tentakels ligt. Een sepia heeft pigmentcellen in zijn huid zitten waarmee hij van kleur kan veranderen en zijn uiterlijk aan de omgeving aan kan passen. Meestal gaan ze daarom goed op in de achtergrond maar tijdens de paring verschieten ze snel van kleur en zijn vaak wit als ze boos zijn. Een sepia heeft geen botten, alleen een interne skeletschelp. Deze schelp, bekend als zeeschuim of het knaagspeeltje in de kanariekooi, spoelt zeker in de zomer volop aan op de Nederlandse en Belgische stranden. Een sepia kan ongeveer 50 cm groot worden. De mannetjes worden niet ouder dan 2 tot 3 jaar, het vrouwtje leeft zelfs maar één jaar.
Sepia's zijn echte nachtdieren die ’s nachts jagen op krabben en garnalen, hun hoofdvoedsel.
Dit is een veelvoorkomend dier aan de Nederlandse en Belgische kust, vooral in de open wateren als Noordzee en Oosterschelde, maar ook in de Noord-Atlantische Oceaan, de Oostzee en de Middellandse Zee.

2008年の研究で[8]、ヨーロッパコウイカは胚の段階で視覚的に最初に見た獲物を、成長してからも好む傾向があることが明らかとなった。例えば一般的には、ヨーロッパコウイカはカニよりもエビを好むが、胚の段階で最初にカニと出会った個体は孵化後エビよりもカニを多く捕るようになる。
ヨーロッパコウイカのタイプ標本が獲られた場所については"Oceano"(海)と記されているだけで、具体的にどこの場所なのかは分かっていない。この標本は現在、ロンドン・リンネ学会に預けられている[9]。
Sepia officinalis jurujubai Oliveira, 1940は、当初ヨーロッパコウイカの亜種として記されたが、現在ではアメリカアオリイカの後行シノニムであるとされている[10]。

갑오징어(학명: Sepia officinalis)는 갑오징어과에 속하는 동물로, 흔히 갑오징어라 일컬어지는 생물 가운데 가장 몸집이 크고 개체 수가 많은 종이다. 몸길이는 8cm ~ 1.8m까지로 크기가 다양하다.
오징어과에 속하는 연체동물로 여덟 개의 짧은 다리와 두 개의 긴 촉완이 있는데 이 다리들 가운데에 입이 있다. 각각의 다리와 촉완에는 딱딱하고 거친 빨판이 나 있다. 촉완은 눈 뒤에 있는 주머니 속으로 끌어 넣을 수가 있으며 다리는 물체에 몸을 부착시키거나 게나 물고기 같은 작은 동물을 잡는 데 쓰인다.
몸에는 갈색의 가로줄 무늬와 자주색 반점이 있다. 햇빛을 받으면 금속성 광택을 내고 자주 몸색깔을 바꾸기도 한다. 몸통은 달걀 모양이며 둘레에는 주름 장식처럼 아가미가 둘러싸고 있다.
해면질과 백악질로 되어 있는 갑오징어뼈라는 내골격이 있는데, 칼슘 성분이 많아 카나리아·앵무새 등 애완용 조류의 먹이나 치약의 원료로 쓰인다. 또는, 뼈를 갈아 상처에 바르는 약으로 쓰기도 한다. 뼈와 몸통 사이의 공간에 물을 빨아들이고 내뿜는 힘으로 이동한다. 물을 내뿜어 모래 속에 숨어 있는 게를 드러내 놓기도 하고 적을 피해 숨기 위해서 먹물을 뿌려 물을 흐리게 하기도 한다. 동의보감, 물명고, 물보, 전어지, 규합총서 등의 옛 문헌에 따르면 우리말로 오중어·오증어·오儷어·오적이·오직어 등으로 불렸으며 한자어로는 오적어(烏賊魚)가 표준어였고 오즉(烏陝)·남어(纜魚)·묵어(墨魚)·흑어(黑魚)라고도 하였다.
아메리카대륙 연안의 바다를 제외하고는 거의 전 세계에서 볼 수 있다.[2]
한국에서 잡히는 갑오징어의 제철은 4~10월이다.
